We prepare Spiedo Bresciano, the traditional Brescian spit roast, with passion and respect for tradition.

Mombolini made with pork loin and pork neck, pork ribs, fresh pork fat, sage and rabbit. The meat is cooked slowly, basted with alpine butter and flavoured with finely chopped sage.

It is usually accompanied by a light soup with liver or a platter of cured meats.

Polenta from Storo and roast potatoes complete the meal.
